If the southbound City of New Orleans leaves Chicago at 8:00 p.m., will dinner be served to first-class (sleeper) passengers? Or, should I not count on the "free" dinner and just plan on eating dinner before I get on board?

Yes, dinner will be served on the City after departure. I rode the City on my trip in July, and dinner was served; however, on the night I rode, there was some kind of problem, so they didn't open the dining car until 10 PM, which is awful late to eat dinner, in my opinion -- but usually they will open the diner immediately upon departure.
