I would like to know if the CS uses either OAK or EMY to replenish the food supple for the dining car (if needed) on the NB or SB trips?------------------

Oakland, I'm pretty sure. I do recall stopping in Oakland in 2001 and seeing the lounge cafe attendant loading supplies of beverages and stuff.------------------

Yes, it's Oakland - Jack London Square station.
