I saw this http://www.ihc-hobby.com/cgi-bin/bsc.cgi?sn=9X042W5811L7970D57225922050L8O&id=M9850 on sale today, and it looks cool, but I'm not sure what should go behind it. Did Santa Fe ever have anything like that in real life?

Santa Fe did have a steamer like this (actually 2!), they were painted specially for the Valley Flyer. The IHC model is a bit off of the prototype but the paint is pretty good.
