Can anyone tell me the car number guide for the Nightstar cars? I saw 73** and a 71** but don't know if they're coaches, diners, sleepers, baggage, etc.

I rode those cars this past summer on VIA's corridor and on the overnight "Ocean" train. Below is a guide that will help you:

7000 series: baggage car (no separate baggage doors)
7100 series: coach (may be VIA-1 car...not sure)
7200 series: coach (both long distance and corridor service)
7300 series: galley/lounge/service car7400 series: dining car
7500 series: sleeping car
7600 series: transition/power car (used to connect with traditional streamlined cars, usually the dome "Park" car)

VIA Rail refers to these as "Renaissance" cars. Canadian railfans nickname them "Ren" cars and don't seem too enthusiastic. If you need more details or photos, I can refer you to my TrainWeb article about that trip.
