I am planning a trip from Chicago-Seattle on the EB in late May. My flight (to Alaska) was originally scheduled to leave at 4PM, now Alaska Airlines re-did its schedules and the flight won't leave until 7PM.
That gives me several hours now to bum around the city. Is there anywhere at the SEA station to store luggage for a couple of hours since my layover is extended?
Much thanks!

They will store your luggage at the station. If you're traveling in a sleeper it's free-otherwise there is a small fee per bag.

You might have time for a quick ride on the Cascades Talgo now. Not all the way to Portland but maybe somewhere like East Olympia or Longview. If you've not ridden one of the Talgos before you'll find it time well-spent.
